French Crêpes with Coconut Flakes

Crêpes Française à la noix de coco



  • 4 beaten eggs
  • 2 cups of milk (laictaid, say or almond milk for lacto-intolerant)
  • 1/3 cup of butter (melted)
  • 1/4 cup of sugar
  • 1 pinch of salt
  • 1 cups of flour
  • 1/3 cup of flaked, sweetened coconut

    1) when blending milk and coconut flakes, make sure not to complety mash all the coconut

    2) When cokking, tilt the pan with a circular motion so that the mixture coats the surface evenly


  • In a large bowl, mix eggs with 1 cup milk 
  • Gradually add in butter, then sugar while swirling 
  • Add in a pinch of salt 
  • Combine the mixture with the flour
  • In a mixer, blend in the remaining 1 cup of milk with coconut and add it to the mixture
  • Stir until smooth then let it rest for ~30min
  • Heat a frying pan over medium high heat
  • Use thin layers of the mixture to make the crepes
  • Cook the crepe until the bottom is light brown
